Good substitute for that canned / jar stuff you get at a supermarket!
4 peaches (ripe juicy ones) peeled and diced 1 red bell pepper, diced up 1/2 red onion, finely diced up 1 jalapeno, really finely diced salt and pepper to taste
Mix it all up and add salt and pepper to taste - don't overdo it cause the flavor develops. Let it sit for about 15 mins.
Super nice with tortilla chips or on top of meat like chicken.
If you want a twist, put half a mango in it as well. Rock on... |
