Special Peach Salsa 
Good substitute for that canned / jar stuff you get at a supermarket!

4 peaches (ripe juicy ones) peeled and diced
1 red bell pepper, diced up
1/2 red onion, finely diced up
1 jalapeno, really finely diced
salt and pepper to taste

Mix it all up and add salt and pepper to taste - don't overdo it cause the flavor develops. Let it sit for about 15 mins.

Super nice with tortilla chips or on top of meat like chicken.

If you want a twist, put half a mango in it as well. Rock on...

I do the same salsa, except reverse. Use mangos and add a small peach. Will try yours too

I also do something similar to this but with a few twists:

1.I first grilled the peaches over some hot coals for about 3 minutes on each side. It not only made it a lot easier to peel the peaches. It also helps make sure that you get them sweet in case you got some that are slightly unripe. They also have this almost-like-caramel flavor in them with a smokey taste.

2. I also added of a few sprigs of coriander roughly chopped. It gives it this really fresh taste that I like with Mexican food.

3. Instead of jalapeno, I use scotch bonnet. I know it's not really that authentic and it's not as spicy as a jalapeno. But it has a unique taste that really goes well with the peaches.
