Well if you are going it alone or camping with a few people? There are all kinds of prepackage dehydrated meals that you just add hot water.Just look in the stores for them or on the inter-net. If you look out in the super market you can find all kinds of easy to make meals.
It does depend on what type of camping you are doing? Backpacking I know you want to keep it real easy and watch the weight of what you are carrying.
Then moving on to other types of camping like Family tent camping it's all in the coolers and how long your out for? And can you get ice when you need it.
We use to bring and make some things ahead and freeze them like chili and stews. I make chicken and dumplings by making the chicken stew part up ahead and keep the dry ingredients for the dumplings in a zip bag then mark the bag with how much water is needed when making it. Then just heat up the chicken stew part for a while. Then mix up the dumpling mix and spoon it on top of the stew and cover for 15 minutes and that's it!
I am a retired Chef and cooked for a living for 28 years! And have been doing all kinds of camping most of my life all over the world.
Now here is the BIG TIPS. Know what you can do and keep it easy. Plan your meals ahead before you leave to go.And here is my BIG ONE! If you do the cooking make sure that someone else does the dishes!!
