We recently tried combining some apple and maple wood to smoke some pork belly. Awesome!

I agree on Apple and Hickory. I have used Maple with Pork, it was ok.

Also, try dried grapevines with fish. My local winery will offer them for free when pruning their vineyards.

White grapes give a nice flavor to trout. Red grape added to hickory wood adds a nice flavor to beef

Grapevine can also be added to the grill as well
