Ice popsicles are excellent treats for beating the summer heat on a long road trip.

Ice popsicles are excellent for beating the summer heat on a long road trip. They are cool and refreshing, and they can satisfy any sweet tooth. More importantly, ice popsicles can keep the kids occupied while sitting in the RV. You won't have to deal with them asking "Are we there yet?" over and over when they are too busy eating their ice popsicles. Best of all, you can make popsicles in your RV with just a bowl, a sturdy fork, popsicle molds and a freezer. Here are some great recipes:

Chunky Pineapple Orange Pops

Serves 4-6
Preparation time: 15 mins

Ingredients:

  • 1 cup of pineapple tidbits
  • 1 cup of orange juice
  • 2 cups of white grape juice

Instructions:

  1. Mix the orange juice, the grape juice and the pineapple tidbits in a bowl. Pour the mixture into your molds. Let the molds sit in the freezer for five hours or until it is solid.

Peaches and Cream Pops

Serves 4-6
Preparation time: 15 mins

Ingredients:

  • 2 ripe peaches (1 can in light syrup if you can't find fresh fruit)
  • 1 cup heavy cream
  • 1 teaspoon of honey

Instructions:

  1. Slice and pit your peaches. Make sure they are cut into small bits. Whip the heavy cream with a hand blender if you have one in your RV; if not, then use a fork or an egg beater. Mix the peaches with the whipped cream and the honey. Put the mixture in your molds and let them freeze for five hours.

Piña Colada Pops

Serves 4-6
Preparation time: 15 mins

Ingredients:

  • 1 4-ounce can of pineapple tidbits
  • 1 medium-sized banana
  • 1 10-ounce can of coconut milk
  • 1/2 teaspoon of vanilla extract

Instructions:

  1. Peel the banana and mash it in a bowl until its texture is smooth. Add the pineapple tidbits, the coconut milk, and the vanilla extract into the bowl, and then mix all the ingredients together. Pour the mix into your molds and then let the molds sit in your freezer for five hours.

Rocky Road Icicles

Serves 4-6
Preparation time: 15 mins

Ingredients:

  • 2 cups of full-fat milk (milk with 2% fat or coconut milk are also good alternatives)
  • 1/2 cup of cocoa powder
  • 1/2 cup of maple syrup
  • 2 tablespoons of vanilla extract
  • 1/2 cup of miniature marshmallows
  • 1/4 cup of peanuts (use other nuts if you don't want peanuts)

Instructions:

  1. Mix together all the ingredients except the marshmallows and the nuts in a bowl. Whip it with a hand blender or an egg beater. Add the marshmallows and the nuts into the bowl, and then mix again. Pour into the molds and allow the pops to solidify in the freezer for five hours. A no-cook chocolate pudding mix will also do if you don't have cocoa powder.

Strawberry Lemonade Popsicles

Serves 4-6
Preparation time: 20 mins

Ingredients:

  • 1 12-ounce can of lemonade concentrate (or three cups of homemade lemonade)
  • 3 cups of cold water
  • 1 16-ounce pack of strawberries

Instructions:

  1. Slice the strawberries and mash them in a bowl. In a pitcher, mix the water with the lemonade concentrate. (Skip this part if you want to use lemonade you made on your own.) Pour the lemonade in the bowl with the mashed strawberries and mix them well. Put the mixture into the molds and freeze for five hours.

Three-Berry Pops

Serves 4-6
Preparation time: 20 mins

Ingredients:

  • 1/2 cup of fresh blueberries
  • 1/2 cup of raspberries
  • 1/2 cup of strawberries
  • 1 small banana
  • 2 cups of yogurt, plain or vanilla-flavored

Instructions:

  1. Cut the berries and the banana into small bits, and then mash them all together in a bowl. Add the yoghurt in the bowl and mix thoroughly. Use a hand blender for smoother texture if possible. Place the mixture in the molds and then freeze them for five hours.

Watermelon Pops

Serves 4-6
Preparation time: 15 mins

Ingredients:

  • 1 cup of watermelon chunks
  • 1 cup of orange or pineapple juice
  • 1 cup of water

Instructions:

  1. Remove the seeds from your watermelon chunks and then mash them. Add the fruit juice and the water, and then mix well. Pour into molds, and then freeze for five hours.

These ice popsicle recipes are quick and easy to make. You can whip them up even without any fancy kitchen equipment. Just make sure that the molds you use for making these popsicles come with a sturdy base or its own storage case. This will prevent your popsicle mix from toppling inside your freezer while your RV is on the move. Also, get only the kind of molds that will fit right inside your freezer - tall molds for normal freezers and short molds for compact freezers.
