Shrimp Boil Recipe

Here is a recipe we make every year on our camping vacation while up in the great state of Maine. The owners daughter has become a very good friend of ours over the past 25 years and will not let me have the same campsite if I don't make this every year while there! So here it is and it can be doubled if need be. One big pot is all you need to make this one.

We call it SHRIMP BOIL. My Way
8 cups / 2 quarts of water
12 ounces beer
1/4 cup Old Bay Seasoning
1 Tablespoon salt
4 medium red potatoes quartered.
1 large onion cut into large chunks.
1/2 pound smoked sausage, cut into 1 inch chunks.
4 - 6 fresh ears of corn, shucked and cut into 4" pieces
2 pounds of unpeeled jumbo shrimp.

Instructions
in a very large pot with a lid, Bring water, beer, Old bay and salt to a rolling boil. Cover with the lid to keep it boiling.
Now stir in the potatoes and onions to the pot and cover and let cook for 8 minutes.
After that add the smoked sausage and stir and cover to cook for 5 more minutes.
Next add the corn and cover and cook for 8 more minutes.
Now last but not least. Add the shrimp and stir and cover to cook for 4 minutes or until cooked all the way through.
Now remove for the heat and drain off the cooking liquid.
Pour it all on to a newspaper covered table. Then give it a dusting of more Old Bay. Serve with lots of melted butter on the side and plenty of paper napkins and dig in and enjoy with ice cold beer! This recipe will serve 4 - 6 people.
