Campfire Breakfast Burritos
*These need to be made before the camping trip and keep in resealable bags on ice.
Ingredients:
-Large Tortillas
-Eggs
-Sausage
-Cheese
-Potatoes
-Other Ingredients (Onions, Green Peppers, Etc.)

Chop up the potatoes and boil them. Then cook the eggs scrambled style and fry the sausage. In a large bowl, mix the eggs, potatoes, sausage and any other ingredients (diced). Take the mixture from the bowl and add to the tortillas, topping them with cheese. Fold up the tortillas into burritos and then wrap each in aluminum foil. After them have cooled, place the wrapped burritos into resealable bags and keep them cool until they are used. To heat the burritos, simply place the foil wrapped burritos on warm coals for 10 minutes or until tortillas are golden brown.

Re: Campfire Breakfast Burritos
I like to use colby jack cheese or a mexican cheese. You could also use cheddar. Now that I think about it, I'm going to use pepper jack next time. Hope you enjoy them!
