What Kinds of Wood for Smoking?
A friend of ours just gave us a brand new smoker, and I can't wait to use it and try my hand smoking meat. What kind of wood is the best for smoking meat? Any suggestions also where to get? I don't think our local government would appreciate the idea of us chopping down trees nearby to get the wood for it.

Hickory works the best for most meats.

It all depends on the kind of meat that you will be smoking. If it beef or game, you can try using oak or hickory. If it's for chicken or fish, pear, apple, or cherry would be great.

I've always been partial to a mixture of applewood and hickory.

Yes, hickory is definitely one of the really nice woods to use whenever you smoke something. It's great especially when it comes to beef or pork. Try checking with you local bbq joints. I'm sure that they will be able to point you to a few places where you can get them cheap.
