|225g (8oz) Fusilli or other small pasta shapes.
2 tablespoons olive oil
1 large onion, peeled and chopped
1 large green pepper de-seeded and chopped
3 cloves garlic, peeled and crushed
340g (12oz) tomatoes, de-seeded and chopped
340g (12oz) cooked black beans rinsed and drained.
3 level tablespoons chopped fresh coriander or parsley.
1/2 level teaspoon salt
feshly ground black pepper
1 teaspoon lemon juice
340g (12oz) curly kale or spinach trimmed washed and blanched for 2 minutes.
225(8oz) Monterey Jack or Cheddar Cheese, grated.
1. Cook the pasta. Meanwhile heat the oil in a large frying pan and saute the onion and pepper in it for 5minutes or until soft. Add the garlic and cook for 2 minutes.
2. Stir in the tomatoes, beans coriander or parsley salt and some pepper and the lemon juice, and simmer for 5 minutes, stirring occasionally.
3. Roughly chop the kale or spinach and stir into the pan. Continue cooking for 3 minutes.
4. Drain the pasta and add to the sauce with the grated cheese. Stir over the heat for 1 minute or until the cheese melts, and then serve straight from the pan.
